how to cook Cauliflower Rice + Ground Beef Bowl

Beef
and rice bowls are easy and delicious, but rice isn’t ketogenic. Thankfully,
you can get cauliflower rice right from the store in the frozen aisle, and it
has a nearly identical texture to white rice! In this recipe, you season it
with garlic, salt, pepper, and a Poblano pepper. The beef is cooked in a skillet
with salsa, green chiles, and the homemade taco seasoning you saw back in the
section on pork. Once it’s all done, top with cheese, tomato, and fresh
avocado.
Ingredients:
Rice
3 minced garlic cloves
1 chopped and seeded
Poblano pepper
2 teaspoons olive oil
Salt and pepper to taste
Beef
1 pound
ground beef
½cup
tomato salsa
½cup
water
1 tablespoon homemade
taco seasoning*
2 teaspoons olive oil
Salt and pepper to taste
*Taco seasoning
1 tablespoon chili
powder
1 ½ teaspoons ground
cumin
½ teaspoon
paprika
¼teaspoon
onion powder
¼teaspoon
garlic powder
¼teaspoon
dried oregano
Toppings
2 diced
avocados
2 cups diced tomatoes
1 cup sharp cheddar
cheese
Directions:
1.Put 2
teaspoons of olive oil in a skillet and heat on medium-high.
2.Add
ground beef, salt, and pepper.
3.Cook
and break up with a spatula, until no pink is left.
4.Add
taco seasoning, salsa, water, and green chiles.
5.Simmer
until the liquid is almost all evaporated.
6.If you
haven’t prepped your veggies, while the meat simmers is a good time.
7.Once the beef is done, it’s time for the
cauliflower.
8.Heat olive oil in another pan and add garlic.
9.When the garlic is
fragrant, you can take them out if you don’t like garlic chunks in your food.
10.Next, add the Poblano
and cook until it begins to soften. It should only take about 2-3 minutes.
11.Stir in rice for 3-5 minutes.
12.When the rice is heated through, it’s ready to
serve.
13.Put rice in a bowl, and then layer on meat,
cheese, and toppings.
14.Serve with sour cream!
