These are fantastic appetizers that marry rich flavors in one bite. There’s two parts to this recipe: stovetop time and oven time. You skillet-cook the bacon and spinach, mix in a little almond flour, and then stuff the mushrooms with seasoned ricotta and your skillet ingredients. The mushrooms bake for just 15 minutes, and they’re ready to eat!
Ingredients:
16 cleaned baby bella mushroom caps
6 cups raw baby spinach
8 chopped slices of turkey bacon
cup ricotta cheese ¼ cup chopped onion 2 tablespoons butter
1 tablespoon almond flour Salt and pepper to taste Garlic powder to taste
Directions:
1.Preheat oven to 375-degrees.
2.Cook the turkey bacon until it’s nice and crispy.
3.Add onions and butter to your bacon skillet.
4.Cook for 3-5 minutes, until onions are softening.
5.Add spinach and wilt for just 2 minutes.
6.Take the pan off the hot stovetop, and add almond flour.
7.Season your ricotta with salt, pepper, and garlic powder to taste.
8.Mix with skillet filling and stuff into mushrooms.
9.Bake for 15 minutes.
10. Serve!
