I love chicken cordon bleu. Melty cheese, tender chicken, and ham
create an amazing flavor combination. To get that in soup form, break out the
slow cooker. There’s a little prep involved, like cooking the chicken and
garlic together with butter in a skillet to get them nice and brown, but most
of the time the soup is simmering away and you’re free to go about your
activities. You want the cooker on “low” because of the dairy products.
Ingredients:
½pound
cubed chicken breast
3 cups chicken broth
¼ cup
plain Greek yogurt 1 ½ tablespoons butter
1 ½
tablespoons minced garlic
Directions:
1.Turn
your slow cooker to “low.”
2.Add
broth, ham, salt, and pepper.
3.Close
the lid to let it heat up.
4.While
that gets warm, melt butter in a skillet.
5.When
hot, add garlic and chicken.
6.Cook
and stir until chicken has turned a golden-brown color.
7.Pour everything into the slow cooker.
8.Before
closing the lid, add yogurt, cheese, and half-and-half.
9.Cook
(on low) for 6 hours.
10. Garnish with fresh
parsley and serve!
