I love chicken cordon bleu. Melty cheese, tender chicken, and ham create an amazing flavor combination. To get that in soup form, break out the slow cooker. There’s a little prep involved, like cooking the chicken and garlic together with butter in a skillet to get them nice and brown, but most of the time the soup is simmering away and you’re free to go about your activities. You want the cooker on “low” because of the dairy products.
Ingredients:
½pound cubed chicken breast
3 cups chicken broth
6-ounces chopped ham ¾ cup half-and-half
¼ cup plain Greek yogurt 1 ½ tablespoons butter
1 ½ tablespoons minced garlic
2-ounces Swiss cheese Salt and pepper to taste Handful of fresh parsley
Directions:
1.Turn your slow cooker to “low.”
2.Add broth, ham, salt, and pepper.
3.Close the lid to let it heat up.
4.While that gets warm, melt butter in a skillet.
5.When hot, add garlic and chicken.
6.Cook and stir until chicken has turned a golden-brown color.
7.Pour everything into the slow cooker.
8.Before closing the lid, add yogurt, cheese, and half-and-half.
9.Cook (on low) for 6 hours.
10. Garnish with fresh parsley and serve!
