Duck fat is underappreciated, which is sad, because it makes vegetables so good. It has a silky-smooth texture and a high smoke point, making it ideal for browning. You can even reuse it. Heat the fat, add radishes, season, and cook for just 7 minutes. You can either serve the radishes right away while they’re hot, or chill them.
Ingredients:
1 pound radishes
4 tablespoons minced chives
4 tablespoons diced rosemary
4 tablespoons duck fat Salt and pepper to taste
Directions:
1.Remove the stems from your radishes and cut into quarters.
2.Put fat in pan and heat on medium.
3.When hot, add radishes and season well with salt and pepper.
4.Cook for 7 minutes before adding chives.
5.After 2 minutes, add rosemary.
6.After 1 minute, serve!
