how to cook Good-Health Roasted Garlic Soup
Serves: 6
With two whole garlic bulbs, this soup is a fantastic remedy for
colds, flus, and anything in-between. For extra flavor,
you’ll be adding bacon, and for texture, there’s cauliflower. You first roast
the garlic wrapped in foil for 35 minutes, and then cook with shallots that
you’ve browned in olive oil, along with broth and cauliflower. That simmers for
20 minutes before getting pureed to a silky- smooth texture.
Ingredients:
6 cups veggie broth
5 cups’ worth of
cauliflower florets
5 cooked + crumbled
bacon strips
2 whole garlic bulbs
3 chopped shallots
1 tablespoon olive oil
Salt and pepper to taste
Directions:
1.Preheat
your oven to 400-degrees.
2.Carefully
peel the exterior layers of the bulbs, without popping out the individual
cloves.
3.Remove ¼-inch off
the tops, and put on a piece of foil.
4.Brush each bulb with ½ teaspoon of oil and wrap
in foil.
5.Bake for 35 minutes.
6.While the garlic roasts,
heat the rest of the olive oil in a pan and cook shallots for about 6 minutes.
7.When garlic is done, cool before unwrapping the
bulbs.
8.Carefully
remove garlic from their cloves.
9.Add
garlic to your pan of shallots with the rest of the ingredients.
10. Turn the skillet
back on and cover.
11. When
boiling, quickly turn the heat to low and let the soup simmer for 15- 20
minutes.
12. When the cauliflower is soft, move the pan contents to a
blender and puree.
13. Before serving, season with salt and pepper as needed, and top
with a little pile of bacon.
