Stir-fry is one of the quickest meals you can make and a great way to use up veggies like red bell peppers, zucchini, and onion. You can add or swap in broccoli, too, if you want. You want to get a pound of beef steak and slice it up thin. If you don’t have a wok, a skillet works just as well. The beef browns quickly in a hot, hot skillet, and then moves to a plate while you cook the vegetables. The last step is to pour in the beef stock and tamari, and then toss the beef back in. See? So easy!

Ingredients:
1 pound beef (steak)
1 cup beef stock
1 sliced red bell pepper
1 chopped zucchini
¼cup chopped onion
3 minced garlic cloves
1 tablespoon tamari
1 tablespoon coconut oil Salt and pepper to taste
Directions:
1.Pour oil into a skillet and heat on medium-high.
2.While that heats, cut your steak into strips.
3.Add to the hot skillet and cook until browned on both sides.
4.Season well with salt and pepper.
5.Plate.
6.Add pepper, onion, and zucchini into the skillet.
7.Stir and cook until they begin to soften.
8.Pour in stock and tamari.
9.After a minute or two, return the beef to the skillet.
10. Cook for another few minutes to blend the flavors.
11. Serve!
