Time: 25 minutes (20 minutes oven time, 5 minutes guacamole time)

This recipe gets an appetizer-primed makeover by adding bits of sun- dried tomato and jalapeno to the guacamole, which tops oven-cooked bacon. The bite is salty, creamy, and fresh all at once. A great appetizer idea for a picnic or BBQ.
Ingredients:
9 slices of bacon
1 ripe avocado
2 minced garlic cloves
1 seeded and minced jalapeno
2 tablespoons minced cilantro
2 tablespoons minced onion
cup minced sun-driedtomato Salt and pepper to taste
Directions:
1.To make bacon, line a cookie sheet first with foil, then parchment paper.
2.Cut bacon slices into bite-sized pieces and lay on paper. You can probably get about four pieces per full-size bacon slice.
3.Season little bites with black pepper.
4.Stick bacon in the oven and turn to 400-degrees.
5.After 20 minutes, check on the bacon. If it’s crisp and brown, remove and put pieces on a paper towel.
6.To make the guacamole, smash the avocado and add the rest of the ingredients, mixing well.
7.Top bacon bites with spoonful of guacamole.
8.Serve right away!
